Orange and Mozzarella Salad

Orange and Mozzarella Salad

1 large ripe, sweet orange
125 g Mozzarella cheese
A twist of salt
Drizzle of extra virgin olive oil
A hand full of almond shavings

Peel the Orange and remove as much of the white bits from the outside as possible. Separate into the individual segments and lay out on a large plate. Drain the Mozzarella cheese and slice into pieces almost the same size as the orange segments, laying in between the segments.

Top the Mozzarella cheese pieces with the almond shavings/pieces and twist your salt mill over the plate, but be careful not to add too much, you just need a hint of salt. Now take the bottle of extra virgin olive oil, place two fingers over the bottle neck opening and drizzle a little oil over the orange and cheese. If the orange is not very ripe, you may need a little more oil to pacify the acidity of the citrus. There you are, all done!
